Chocolate Panna Cotta
Although panna cotta is originally made only with sweet cream, sugar, and gelatin, the addition of good dark chocolate does not harm it at all. Serve the dessert well chilled, and optionally garnish it with fresh fruit or drizzle with any desired topping.

600 ml Sweet cream

250 ml Milk, whole milk

2.5 teaspoons Sugar, white

100 g chocolate, dark

2.5 teaspoons Gelatin powder, unsweetened

Steps

Lightly grease eight small round molds (125 ml capacity) with oil. In a small bowl, mix the powdered gelatin with one teaspoon of water.

Place a saucepan with sweet cream, sugar, and milk on the stove. Heat slowly over moderate heat, stirring until all the sugar dissolves. Once the liquid comes to a boil, remove the saucepan from the heat and mix in the chocolate into the hot liquid. Once you have a smooth chocolate mixture, add the gelatin and stir well until it is completely dissolved.

Fill the greased molds almost to the top with the chocolate mixture. Let it cool to room temperature, then cover the molds with plastic wrap and refrigerate for 3 to 4 hours until the dessert is well chilled and fully set.

Serve the chilled dessert directly in the molds it was prepared in, or for a more elegant presentation, unmold it onto a plate and garnish with fresh fruit or drizzle with any desired topping.

Advice
Instead of gelatin, you can use agar-agar. If you use bitter chocolate, you can slightly increase the amount of sugar added.
