Chocolate Pastry with Red Wine

130 g Raisins

250 ml Alcohol, Wine, Red

250 g Butter, unsalted

250 g Sugar, white

320 g Wheat flour, white, multi-purpose

20 g Cocoa, powdered, unsweetened

30 g chocolate, dark

2 teaspoons Baking powder

220 ml Sweet cream

1 bag Gelatin powder, unsweetened

Steps

Preheat the oven to 180 degrees Celsius. Grease a baking pan (30 x 40 cm) well with butter. Place the soaked raisins together with the red wine into a food processor and blend until smooth. In a bowl, mix the flour, baking powder, cocoa, and powdered chocolate.

In another bowl, use an electric mixer to blend the remaining butter until smooth. Gradually add the sugar, salt, and cinnamon. Then, one by one, add the eggs. Mix each egg for about 30 seconds.

Sift half of the flour mixture, baking powder, cocoa, and powdered chocolate into the butter mixture and mix well on medium speed. Then mix in the remaining flour mixture. Finally, use a hand whisk to mix in the ground raisins with red wine.

Pour the prepared batter into the greased baking pan, smooth the top, and place the pan in the preheated oven for about 35 minutes. The cake is done when a toothpick inserted into the center comes out clean.

Place the baking pan with the baked cake on a wire rack and let it cool. Whip the cream with an electric mixer along with the cream stabilizer until stiff. Transfer it to a piping bag.

Cut the cooled cake into squares of any size. Decorate the pastry with whipped cream (using a star tip) and grapes, serve on a platter or large plate, and enjoy.

Advice
The butter is easiest to soften by taking it out of the refrigerator at least one hour before preparation and letting it stand at room temperature. Instead of raisins, you can use dried cranberries. Before cutting the cake into cubes, you can spread melted chocolate on top.
