Ingredients

4 pieces Pear, fresh

1 piece Lemon, fresh, without shell

4 spoon Sugar, white

200 g Cooking chocolate, unsweetened

50 g Butter, unsalted

0.25 dl Milk, whole milk

125 ml Sweet cream

1 spoon Alcohol, Rum

2 spoons Coconut, flakes
Steps

Carefully peel the pears with a peeler and cut off the bottom part evenly. Thoroughly wash the lemon and slice it into rings. Place a larger pot with about one liter of water on the stove. Add the whole pears, lemon rings, 4 tablespoons of sugar, and bring to a boil. Then reduce the heat and cook for an additional 15 minutes until the pears soften.

In a separate bowl, whip the sweet cream until stiff and store it in the refrigerator until use. Place a larger pot with water on the stove and place a smaller pot on top. Break the chocolate into the smaller pot and add milk and butter. Heat the chocolate in a water bath and stir until you get a smooth cream.

Fill a piping bag with the whipped cream. Thoroughly drain the cooked pears and drizzle them with rum. Place them on plates and pour chocolate over one side. Pipe cream around the bottom part of the pears and sprinkle with coconut flakes. Optionally, you can garnish the pear with a mint leaf.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins.
