Chocolate Pie with Cream

Ingredients

225 g Flour, Wheat, bread flour

3 spoons Cocoa, powdered, unsweetened

150 g Butter, unsalted

25 g Powdered sugar

Steps

Sift the flour and cocoa into a bowl and mix them well with your fingers. Make a well in the center and pour in the sugar. Add the cubed butter and water. With cold hands, knead all the ingredients into a crumbly dough. Shape the dough into a ball, wrap it in foil, and refrigerate for 30 minutes.

Preheat the oven to 190 degrees Celsius. On a lightly floured work surface, roll out the dough to 1 cm thickness and use it to line a pie dish. Prick the dough several times with a fork, place it in the oven, and bake for about 10 minutes.

For the filling, in a large bowl, use an electric mixer to cream the butter and sugar until fluffy, then gradually mix in the eggs and cocoa. Mix until you get a firm, frothy mixture. Place a smaller pot of water on the stove and place a bowl with the broken chocolate on top. Melt the chocolate over the water bath (see advice) and slowly mix it with the cream into the egg mixture.

Reduce the oven temperature to 160 degrees Celsius. Spread the filling over the dough and bake for an additional 45 minutes. Remove the baked pie from the oven and let it cool.

Whip the cream until stiff and spread it over the pie. Grate some chocolate and decorate the dessert with chocolate shavings. Cut the pie into pieces of any size, serve on plates, and present to your guests.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof container with the ingredients on top of another container with hot water and whisk the ingredients in the upper container until they thicken and froth. The water in the lower container should not boil vigorously! Butter is easiest to soften by taking it out of the refrigerator at least one hour before preparation and letting it sit at room temperature.
