Chocolate Rice Soufflé
An excellent rice in a chocolate bath will charm with its cuteness and great taste. It can be served at a party or with a good meal.

Ingredients

75 g Rice, white, long grain

3 dl Milk, partially skimmed

45 g Sugar, white

30 g chocolate, dark

2 piece Egg, fresh

2 dl Coffee, espresso

1 spoon Alcohol, Rum

1 piece Lemon zest, fresh

20 g Butter, unsalted
Steps

Rinse the rice under lukewarm running water and drain it well. Pour the milk into a larger pot and add the lemon zest. Place the pot on the stove and slowly bring the milk to a boil. Add the rice to the boiling milk and cook it covered on low heat for 20 minutes. Stir it several times during cooking.

Remove the pot from the heat, take out the lemon zest, and grate the dark chocolate into the rice. Stir until all the chocolate is melted and combined with the mixture. Let the rice cool.

Separate the egg yolks from the whites into two bowls. Beat the egg whites into stiff peaks. Mix the egg yolks, coffee, sugar, and rum well, then fold this mixture into the cooled rice mixture. Finally, gently fold in the beaten egg whites with a whisk.

Preheat the oven to 180°C. Grease small round soufflé molds and fill them with the rice mixture. Bake in the preheated oven for 45 minutes.

Let the baked soufflé cool completely, and serve it in the same cups it was baked in. Optionally, decorate it with fresh fruit.
