Ingredients
-
6 pieces Egg, fresh
-
100 g Sugar, white
-
120 g chocolate, dark
-
0.5 l Sweet cream
-
pieces Marmalade, orange
-
pieces chocolate, dark
Steps
-
Preheat the oven to 180 degrees Celsius. Line a low baking tray for rolls (size 25 x 35 cm) with baking paper.
-
Separate the egg yolks and whites into two bowls. Add sugar to the yolks and beat them into a light, pale yellow cream, then beat the whites into stiff peaks.
-
Sift the cocoa powder over the beaten yolks and slowly mix it in on low speed. Then, in two or three batches, gently and slowly fold in the beaten egg whites with a hand whisk.
-
Pour the batter into the prepared baking tray and spread it evenly with a spatula over the entire surface. Bake in the preheated oven for 10-15 minutes or until it feels springy to the touch.
-
Remove the baked sponge from the oven and roll it onto a clean cloth. Carefully remove the baking paper from the top, trim the hard edges, then roll the sponge into a roll and let it cool completely.
-
Whip the sweet cream until stiff. Unroll the cooled sponge and spread it with jam, then spread about half of the whipped cream on top. Carefully roll the sponge back up and place the roll on a serving plate or platter. Spread the remaining whipped cream over the top and sides, and sprinkle with grated chocolate or chocolate shavings. Store the roll in the refrigerator for a few hours, then slice and serve.

Advice
For extra sweetness and aroma, you can add a packet of vanilla sugar to the whipped cream while beating it.
