Chocolate Roll with Strawberries

Ingredients
Cream

10 g Seaweed, agar, dried

100 g Strawberries

500 ml Sweet cream

Dough

30 g Cocoa, powdered, unsweetened

100 g Wheat flour, white, multi-purpose

Steps

Preheat the oven to 220 °C. Mix the eggs and water with a mixer at maximum speed for one minute. Gradually add sugar and vanilla sugar while beating. Beat for another two minutes.

Mix the flour with starch, baking powder, and cocoa powder. Sift the mixture onto the egg cream and mix briefly with the mixer set to the lowest speed.

Line a wide and shallow baking tray (30 x 40 cm) with baking paper and pour the batter onto it, spreading it evenly with a spatula.

Bake in the preheated oven for 10 to 15 minutes on the middle rack. Immediately turn the baked sponge onto a damp (and wrung) cloth sprinkled with sugar. Carefully but quickly remove the baking paper. Roll the sponge with the cloth.

Wash and clean the strawberries. Mash 100 g of strawberries. Prepare the cream: mix agar-agar with water in a pot and heat until boiling. Remove the pot from the heat and let it cool slightly. Add the mashed strawberries and mix. Whip the cream until stiff and gradually add the strawberry mixture while whipping. Finally, gently fold in the powdered sugar with a spatula.

Carefully unroll the sponge, spread the cream evenly, and roll it up again. Sprinkle the roll with powdered sugar, slice it, arrange it on a serving plate, and decorate with strawberries and chocolate shavings.

Advice
Instead of agar-agar, you can use powdered gelatin. Instead of strawberries, you can decorate the roll with some other small or preserved fruit. Combine differently colored dough and filling to always create a new dessert.
