Chocolate Rum Truffles

Ingredients

200 g chocolate, dark

100 g chocolate, dark

250 ml Sweet cream

2.5 teaspoons Alcohol, Rum

25 g Butter, unsalted

pieces Cocoa, powdered, unsweetened

Chop the dark and milk chocolate into small pieces and place them in a heatproof bowl.

Pour the sweet cream into a small pot and slowly heat it over medium heat. Just before the cream boils, remove it from the heat and pour it over the chocolate. Wait for one minute without stirring, then gently mix with a hand whisk or spatula until you get a smooth and uniform chocolate mixture. Stir in the rum and butter. It's important to mix the ingredients without whipping to avoid incorporating air into the cream.

Pour the chocolate mixture into a small glass baking dish and let it cool to room temperature. Cover the dish with plastic wrap and refrigerate for 4 hours (preferably overnight) to allow the mixture to cool and set properly.

Use a spoon to scoop the set mixture and place it on prepared parchment paper. Sprinkle cocoa powder onto a shallow plate. Roll each chocolate ball in the cocoa powder and shape it into a sphere with your hands. To prevent the truffles from sticking to your hands, dust them with cocoa powder.

Place the shaped truffles in the refrigerator for 30 minutes, then serve them on a plate or platter and enjoy.
