Chocolate Šarkelj
A very juicy, light, and delicious cake that will impress you with its simple preparation. Once cooled, the šarkelj can simply be dusted with powdered sugar before serving. If you love chocolate and believe theres never too much of it, you can also drizzle it with chocolate glaze or ganache.

Steps

Place a small pot on the stove and add butter. Heat over medium heat, and when the butter is almost completely melted, pour in water and add sugar and cocoa powder. Stir until you get a completely smooth mixture without lumps. Let it simmer gently for 10 to 15 minutes until it thickens slightly. Then pour the chocolate mixture into a bowl and let it cool to lukewarm, stirring occasionally.

Meanwhile, sift the flour and baking powder into a bowl and mix the sifted ingredients well.

First, mix the egg yolks into the cooled chocolate mixture, then add the flour mixed with baking powder in two or three parts. You can mix the ingredients with a hand whisk or an electric mixer set to low speed.

Add a pinch of salt to the egg whites and beat them into stiff peaks. Gently fold the beaten egg whites into the chocolate-yolk mixture using a hand whisk or spatula.

Pour the prepared batter into a well-buttered šarkelj baking dish. Smooth the top of the batter with a spatula, then place the dish in the oven preheated to 170°C (340°F) for 30-40 minutes. The baking time depends on the size of the dish, and the šarkelj is done when a toothpick inserted into the cake comes out clean.

Let the baked šarkelj cool completely before serving. Once cooled, invert it onto a plate and dust the top with powdered sugar.
