Chocolate Souffle

2 piece Egg, fresh

25 g Powdered sugar

20 g Wheat flour, white, multi-purpose

80 g chocolate, dark

70 g Butter, unsalted

Preheat the oven to 180 degrees Celsius. Place a larger pot on the stove and pour in a little water (about 2 dl). Place a smaller bowl on top of the pot, in which you crumble the chocolate and cut the butter. Let it cook over moderate heat until the butter and chocolate melt. Once the chocolate has melted, mix it well to obtain a smooth mixture and let it cool slightly.

In a bowl with a mixer, whisk the eggs and powdered sugar until frothy. Add the flour, slowly mixing it into the mixture with a whisk. Finally, mix the cooled chocolate into the mixture.

Grease the molds in which you will bake the souffle well with butter and dust them with cocoa powder. Pour the mixture into the prepared molds, filling them to about five millimeters below the rim. Bake the souffles for 8–15 minutes (the baking time depends on the oven and the molds). A properly baked souffle should still be liquid inside.

Remove the baked souffles from the oven and turn them out onto a plate while still hot. You can serve them with a scoop of vanilla or fruit ice cream on the side.
