Chocolate Souffle with Orange Sauce

100 g chocolate, dark

25 g Butter, unsalted

4 pieces Egg, fresh

100 g Sugar, white
Steps

Break or chop the chocolate into pieces and melt it together with the butter in a double boiler (see tips). Gently mix the melted ingredients to create a smooth chocolate mixture, then let it cool until lukewarm.

Beat the egg whites until soft peaks begin to form on the surface. Gradually add the sugar and continue mixing until you get a soft and glossy meringue that holds its shape. First, mix the egg yolks into the cooled chocolate, then gently and slowly fold in the beaten egg whites in two or three batches.

Fill the prepared molds to the top with the chocolate mixture and use your thumb to create a small channel around the edge. Bake the souffles in a preheated oven for 10 to 14 minutes, or until they rise beautifully, are slightly browned on top, and still runny inside.

While the souffles are baking, prepare the sauce. Pour half of the orange juice into a small pot. Add the sugar, crushed cardamom pods, and grated orange zest, bring to a boil, and simmer over moderate heat for 2 to 3 minutes. Mix the remaining juice smoothly with cornstarch and stir it into the orange sauce while continuously mixing. Once the sauce thickens slightly and comes to a boil, remove the pot from the heat. Strain the sauce through a sieve into a serving dish.

Dust the baked souffles with cocoa powder and serve immediately. Accompany with the orange sauce, allowing guests to pour it over their souffles as they like.

Advice
If you dont have cardamom pods on hand, you can also use ground cardamom, which can be substituted with cinnamon if desired.
