Pour the cream into a small pot. Add the diced smoked bacon, thyme, salt, and pepper, and slowly heat over moderate heat. Once the cream comes to a boil, remove the pot from the heat.

Chop the chocolate and butter into pieces and place them in a bowl. Pour the hot cream over them. Squeeze the bacon well to release as much flavor as possible.

Mix the ingredients in the bowl thoroughly to create a smooth chocolate cream. Place the chocolate spread with bacon in the refrigerator for one hour to cool completely.
