Chocolate Tart with Caramel Cream

Ingredients
Caramel sauce

Dough

115 g Butter, unsalted

60 g Powdered sugar

30 g Cocoa, powdered, unsweetened

1 piece Egg, egg yolk, fresh

0.75 teaspoons Vanilla, extract, imitation

160 g Wheat flour, white, multi-purpose

Steps

First, prepare the dough. Using an electric mixer, cream together the softened butter, sugar, and cocoa. Mix in the egg yolk and vanilla extract, then gradually add the sifted flour and salt on low speed.

Preheat the oven to 180 degrees Celsius. Line the bottom and sides of a greased tart pan (25 cm in diameter) with the dough. Place a piece of aluminum foil on the dough and scatter dry beans (baking beads) on top. Spread the beans evenly across the bottom. Bake the dough in the preheated oven for 15 minutes, then remove from the oven and take out the beans and foil. Bake the dough in the preheated oven for another 10 to 15 minutes. Let the baked base cool in the pan on a wire rack.

Next, prepare the salted caramel cream. In a larger saucepan, bring a mixture of water, sugar, and corn syrup to a boil. Once the mixture turns a beautiful amber color (after about 12 minutes of cooking), remove the saucepan from the heat. Stir in the butter, cream, and salt into the hot caramel. Pour the mixture onto the cooled dough base and let it cool.

Finally, prepare the chocolate glaze. Chop the chocolate into pieces and place them in a bowl. Heat the cream in a small saucepan. Pour the hot cream over the chocolate, wait 1 to 2 minutes, then stir well until you get a smooth chocolate mixture. Pour this over the cooled caramel cream. Chill the tart well in the refrigerator before serving.

Decorate the prepared tart with sea salt flakes if desired. Cut it into slices of any size, serve on plates, and enjoy.
