Chocolate Tarts with Raspberries
The tart base for these tarts is "fake" because it is made from crushed cookies and butter. It needs to rest in the refrigerator overnight, but the next day we can enjoy it with even more delight.

Turn on the oven and set it to 180 °C. Crush the cookies and grind them in a food processor. Place a saucepan with butter on the stove and melt the butter over low heat. Transfer the ground cookies to a bowl. Add the melted butter and mix everything well, kneading until the dough forms a ball. Spread the dough into tart molds and use your fingers to evenly distribute it along the bottom and sides of the molds. Place the molds in the preheated oven and bake the dough for 15 minutes until it turns golden brown. Remove the baked bases from the oven and let them cool on a rack to room temperature.

Prepare the raspberry syrup: clean, wash, and drain the raspberries. Blend 200 g of raspberries in a mixer. Strain them through a sieve and collect the juice in a bowl. Use a spoon to gently press the raspberries to extract their juice, then add sugar to the juice. You will need 80 ml of juice.

Chop the chocolate into a medium-sized metal bowl. Heat the cream in a saucepan over medium heat until it boils, then immediately pour it over the chopped chocolate and stir for 5 minutes until the chocolate melts and you get a smooth mixture. Add the raspberry juice and mix well again. Pour the mixture into the tart bases and smooth the top. Cover the tarts and store them in the refrigerator overnight.

The next day, carefully remove the tarts from the molds, place them on a serving plate, garnish with fresh raspberries, cut into slices, and serve.
