150 g Butter, unsalted

1 piece Lemon, fresh, without shell
-
80 g Candied fruit

30 g Raisins
-
150 g Sugar, brown
-
3 pieces Egg, fresh
-
200 g Flour, Wheat, bread flour
-
1 teaspoon Baking powder
Za model
- 1.5 spoons Butter, unsalted
Steps
-
Cut the butter into pieces. Preheat the oven to 175 degrees Celsius. Prepare a narrow and elongated cake mold and grease it well. Grate about one teaspoon of lemon zest, then cut the lemon in half and squeeze the juice. In a separate bowl, mix the candied fruit and raisins.
-
Add the lemon juice and zest to the mixture of candied fruit and raisins and mix well. In a larger bowl, place the butter pieces and sugar and mix them with an electric mixer until fluffy. Gradually add the eggs while mixing.
-
Slowly mix the fruit mixture and flour with baking powder into the bowl of ingredients. Pour the prepared batter into the mold and bake it in the preheated oven for about 50 minutes.
-
Break the chocolate into pieces. When the cake is baked, take it out of the oven and wait a few minutes for it to cool slightly. Then turn it out onto a wire rack. Place a saucepan on the stove and fill it with water up to 1/3. Place a metal bowl on top and make sure the bowl does not touch the water in the saucepan.
-
Place the broken chocolate pieces and butter in the bowl and melt both ingredients while stirring over the water bath. Pour the chocolate glaze over the cooled cake and decorate it with peeled almonds. Place the cake in the refrigerator for a while to let the glaze set slightly, then cut it into slices, arrange them on a serving platter, and serve to guests.

Advice
It is best to use organic lemons, the peel of which is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax in which the toxins are present. You can peel the almonds yourself by blanching them first. To do this, place them in a special bowl, pour boiling water over them, and let them stand for about 5 minutes so that the skin comes off. Then drain them and remove the skins by hand.
