Chocolate Truffles with Avocado

Ingredients

140 g chocolate, dark

2 spoons Sugar, brown

1 pinch Salt, table

Steps

Place a pot on the stove and fill it one-third with hot water. Wait for the water in the pot to boil. Meanwhile, break or chop the chocolate into small pieces. Place the chocolate pieces in a heatproof bowl and set it over the pot of boiling water. Slowly melt the chocolate in the bowl. Once the chocolate has melted, add sugar and salt and mix well to create a smooth chocolate mixture.

Cut the avocado in half lengthwise. Use a spoon to remove the avocado flesh from the skin and place it in a food processor. Blend the avocado flesh until smooth.

Add the avocado, vanilla extract, and 1.5 tablespoons of cocoa powder to the bowl with the melted chocolate. Mix the ingredients well to create a smooth chocolate mixture. Cover the bowl with plastic wrap and place it in the refrigerator for 1 hour to cool and firm up.

Take the firmed mixture out of the refrigerator. Use a spoon or ice cream scoop to portion the mixture and place it on prepared parchment paper. Sprinkle the remaining cocoa powder on a shallow plate. Roll each chocolate portion in the cocoa powder and shape it into a ball with your hands. To prevent the balls from sticking to your hands, dust them with cocoa powder.

Place the shaped balls in the refrigerator for a few minutes, then serve them on a plate and enjoy.

It is important to use ripe avocados with soft flesh that slightly resists when pressed on the skin. Overripe fruits have very soft, dark, and bitter flesh. Underripe fruits have very hard flesh.
