Chocolate Whoopie Pies with Vanilla Cream

Preheat the oven to 230 degrees Celsius. Line two low baking sheets with parchment paper. In a large bowl, sift together the flour, cocoa, baking soda, baking powder, and salt. Mix the sifted ingredients well.

In another bowl, using an electric mixer set to high speed, cream together the softened butter and sugar. Reduce the mixer speed slightly and mix in the egg and buttermilk. Then, in two or three additions, mix in the dry ingredients. Stop mixing once you have a smooth and thick batter.

Transfer the batter to a piping bag and pipe small mounds onto the prepared baking sheets (about 16 cookies per sheet). Bake the cookies in the preheated oven for 6 to 7 minutes. Once baked, immediately transfer them to a wire rack to cool completely.

While the cookies are cooling, prepare the vanilla buttercream. Using an electric mixer, first cream together the softened butter and powdered sugar. Then quickly mix in the cream cheese, and finally, add the vanilla extract. If the mixture seems too thin, add a bit more powdered sugar. Place the prepared cream in the refrigerator for 5 minutes to firm up slightly.

Fill a piping bag with the prepared cream. Use a star tip and pipe the cream onto half of the cooled cookies. Cover with the remaining cookies, then gently press each "sandwich" together just enough to spread the cream to the edges. Serve the prepared whoopie pies on a plate or platter and enjoy.
