Cookie base

200 g Breadcrumbs, dried

50 g Butter, unsalted

First, prepare the fruit sauce, as it needs to cool well before we start assembling the dessert in the cup. In a small pot, combine forest fruits, sugar, lemon juice, and water. Bring the mixture to a boil and simmer slowly until the fruit breaks down and the sugar dissolves. Strain the mixture through a fine sieve and return the strained fruit sauce to the pot.

In a small bowl, smoothly mix the starch with a tablespoon of cold water. When the sauce boils, stir in the starch mixture. Cook everything together while stirring continuously for a short time until the sauce thickens but remains fluid. Cool the fruit sauce to room temperature, then store it in the refrigerator.

In a small pot, slowly melt the butter over low heat. Crush the cookies in a food processor or with a rolling pin. Mix them with the melted butter to form a crumbly mixture, which is evenly distributed into the cups where the dessert will be served. Gently press the cookie crumbs to the bottom of the cups with the back of a spoon. Place the cups in the refrigerator.

Break or chop the white chocolate into pieces and melt it in the microwave or over a water bath. Place the mascarpone in a bowl and mix in the melted chocolate. Pour in the sweet cream and whip until the cream thickens. Sweeten it with vanilla sugar.

Remove the cups from the refrigerator and add a few tablespoons of fruit sauce on top of the cookie base. Fill them almost to the top with the prepared cream, which can be added with a spoon or piped with a decorating bag.

Store the dessert in the refrigerator for a few hours. Before serving, decorate it as desired (chopped nuts, crumbled cookies, chopped or grated chocolate, etc.).
