Christmas Fruit Cake

Ingredients

100 g Nuts, almonds, blanched

300 g Figs, fresh

100 g Candied fruit

300 g Wheat flour, white, multi-purpose

1 teaspoon Spices, cinnamon, ground

1 teaspoon Lemon zest, fresh

250 g Butter, unsalted

250 g Sugar, brown

1 teaspoon Vanilla, extract, natural

2 spoons Honey

1 spoon Molasses

4 pieces Egg, fresh

0.5 teaspoons Baking powder

1 spoon Milk, whole milk

3 spoons Alcohol, Whisky

Steps

Preheat the oven to 140 degrees Celsius. Grease a cake pan (20 cm in diameter) well. Line the bottom and sides of the pan with baking paper. The strip of paper lining the sides of the pan should be at least 2 cm higher than the edge to prevent the cake from burning during baking.

Coarsely chop the blanched almonds, and cut the dried figs, apricots, and prunes into smaller pieces. If necessary, also cut the candied orange and lemon peel into smaller pieces. In a large bowl, mix the dried fruit, candied fruit, and almonds. Add the flour, spices, and grated lemon zest. Mix all the ingredients very well with a spoon.

In another bowl, use an electric mixer to cream the chopped butter and sugar. Add the honey, vanilla extract, and molasses, and mix until you get a smooth, creamy mixture. Then gradually (one by one) mix in the eggs. Mix each egg for about 30 seconds. Using a spoon, mix the dried fruit and flour mixture into the egg-butter batter. In a small bowl, mix the milk and baking soda, and then add the mixture along with the brandy to the batter.

Pour the batter into the prepared pan. Make a hole in the center of the batter with the handle of the spoon. Bake the cake in the preheated oven for 180 to 210 minutes. The cake is done when a skewer (wooden stick) inserted into the batter comes out clean. Remove the baked cake from the oven and let it cool completely in the pan.

Decorate the cooled cake with powdered sugar, chocolate cream, or chocolate glaze. Cut it into pieces of any size, serve on plates, and offer with a cup of warm drink.

Advice
The cake develops its full flavor only after a few weeks, so its best to prepare it at least a week before Christmas. Once cooled, wrap the cake carefully in food foil and store it in an airtight container. Molasses can be replaced with honey or golden syrup. Vanilla extract can be made at home.
