Christmas Stuffed Buns

Steps

In a bowl, add a tablespoon of flour, crumbled yeast, and a teaspoon of sugar. Pour in three tablespoons of lukewarm milk and mix the ingredients smoothly. Let the yeast rise in a warm place for about 10 minutes or until it doubles in size.

Whisk the egg yolks and add the remaining sugar and salt. Mix the butter and the remaining milk, pour it into the egg yolks, and mix well again.

Sift the remaining flour into a larger bowl and make a well in the center. Pour the yeast mixture into the well and mix it slightly with the flour. Add the egg mixture and mix everything with a wooden spoon into a dough, then quickly knead it into a smooth ball that separates nicely from the bowl. Cover the bowl with a clean cloth and let the dough rise in a warm place for about 60 minutes.

Sort and wash the raisins. Mix the cottage cheese with sugar and lemon zest. Beat the egg whites into stiff peaks and gently fold them into the cottage cheese mixture. Finally, add the washed raisins.

Wash the apples and coarsely grate them. Season with cinnamon, pour over lemon juice, and mix.

On a lightly floured surface, quickly knead the risen dough, then roll it out to a thickness of one centimeter. Cut the rolled dough into squares. Place a spoonful of the cottage cheese filling and a bit of grated apple in the center of each square. Pull the corners of the square over the filling and press them together at the top, making sure the dough covers the filling well and there are no openings through which the filling could escape during baking. Brush the bun with butter on all sides, then place it in a baking dish greased with butter. Once all the buns are arranged in the baking dish, let them rest for 10 minutes before baking.

Bake the buns for 35-45 minutes in an oven preheated to 180 degrees Celsius. Serve while still warm, and optionally dust with powdered sugar before serving.
