In a bowl with an electric mixer, beat the butter, brown sugar, vanilla sugar, and salt until creamy. Add the egg and mix well. Sift the flour over the mixture and add ground cinnamon. Mix everything well until you get a smooth and uniform dough without lumps. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 20 minutes.

Preheat the oven to 180 degrees Celsius. Take the chilled dough out of the refrigerator and roll it out on a lightly floured surface to a thickness of 0.5 cm. Use a tree-shaped cookie cutter to cut out the cookies. Carefully transfer the cut-out cookies to a baking sheet lined with parchment paper. Bake the cookies in the preheated oven for about 10 to 12 minutes.

Remove the baked cookies from the oven and transfer them from the baking sheet to a wire rack. Let them cool. Prepare a mixture of egg white and powdered sugar to decorate the cookies. Beat the mixture with a hand whisk until it thickens.
