First, prepare the chocolate sauce. Place a small pot on the stove and add cream, cocoa powder, espresso, sugar, and salt. Heat the mixture over moderate heat, stirring slowly until all the sugar dissolves and there are no lumps. Let the sauce simmer gently for 4 minutes, then remove from heat, add the roughly chopped chocolate, and stir well until you get a smooth chocolate sauce.

In a pot, bring to a boil a mixture of milk, water, salt, sugar, and butter. Lower the temperature slightly and add the sifted flour to the boiling liquid. Stir well with a wooden spoon until you get a uniform and smooth mixture without lumps. Continue cooking and stirring until you get a large ball of dough that easily separates from the sides of the pot and the spoon.

Transfer the dough to a bowl, let it cool for a few minutes, then gradually mix in the eggs one by one using an electric mixer set to low speed. It's important to mix well after each egg is added to ensure the ingredients are well combined, resulting in a soft and shiny dough. Fill a piping bag with the dough, fitted with a star-shaped nozzle.

Heat the oil in a large pot. Pipe approximately 10 cm long sticks into the oil and fry for 3 to 4 minutes until they turn golden brown. Remove them from the oil with a slotted spoon and drain on paper towels. Repeat the process until all the dough is used.

In a small bowl, mix sugar and cinnamon, then roll the still-warm churros in the mixture. Serve on plates with the warm chocolate sauce in small bowls on the side.
