Ciabatta with Olives and Herbs
In the good old days, everyone baked bread at home because they couldnt afford to buy it. The evening before baking, it was necessary to prepare a sponge (starter), which was then kneaded into dough the next day. It gave the bread a special aroma and a light texture. From the ingredients listed in the recipe, we prepare two ciabattas.

Ingredients

2 teaspoons Milk, powdered, whole milk

70 g Olives, black, in brine

Steps

Sift the flour into a large bowl and add all the ingredients. Knead the dough for 10 minutes. Properly kneaded dough is elastic and doesn't stick to your hands or the surface.

Turn the dough onto a lightly floured work surface and, with lightly floured hands, divide it into two parts. Shape each part of the dough into a flat square, about 2 cm thick. Ciabattas look better if they are not perfectly shaped.

Preheat the oven to 220 °C. Lightly dust both ciabattas with flour. Line a baking tray with parchment paper and evenly sprinkle it with cornmeal. Transfer the ciabattas to the tray and let them rise for 20 to 30 minutes until the dough doubles in size.

Bake the ciabattas in the preheated oven for 30 minutes or until they turn light brown and sound hollow when tapped on the bottom. Remove the baked ciabattas from the oven and let them cool on a wire rack. Slice them, place them in a bread basket, and serve.
