Cinnamon Rolls with Hazelnuts and Caramel Syrup

Steps

First, prepare the yeast mixture: in a small bowl, mix water, yeast, a teaspoon of sugar, and a tablespoon of flour until smooth. Let it sit for 10 minutes to allow the yeast to activate. In another bowl, mix melted butter, milk, egg yolks, and the remaining sugar.

Sift the flour into a larger bowl and make a well in the center. Sprinkle salt around the flour, then pour the activated yeast mixture and the egg yolk mixture into the well. Attach the dough hooks to an electric mixer and start mixing the ingredients in the bowl. Knead the dough on medium speed for 8 minutes until it becomes smooth, pliable, and elastic.

Shape the kneaded dough into a ball, place it in a greased bowl, and cover it with a clean cloth (or oiled plastic wrap). Let it rise in a warm place for 1 hour or until it doubles in volume.

In a small bowl, mix cinnamon and brown sugar. In a saucepan, slowly melt the butter over low heat. Once the butter is melted, remove the saucepan from the heat.

Quickly knead the risen dough in the bowl, then turn it out onto a floured work surface and roll it into a 30 x 45 cm rectangle. Brush it with melted butter and sprinkle with the sugar and cinnamon mixture. Roll it up from the longer side into a log and cut it into 15 pieces.

Place the saucepan with butter, sugar, and honey on the stove. Heat the mixture over low heat while stirring until the sugar and honey dissolve. Pour the syrup into a deep baking dish (23 x 33 cm) and spread it evenly over the bottom. Sprinkle chopped hazelnuts over the syrup. Arrange the dough rolls tightly in the baking dish. Cover them with a cloth and let them rise for 25 minutes.

Bake the risen rolls in a preheated oven at 190°C for 25 to 30 minutes. Once baked, carefully invert the baking dish onto a serving plate or platter (be careful not to burn yourself with the hot syrup). Let the rolls cool slightly. Serve warm with a cup of hot or cold beverage.

Advice
Optionally, add a little grated orange or lemon zest to the dough. Instead of hazelnuts, you can use chopped walnuts, almonds, peanuts, or pecans.
