Cinnamon Stars
Cinnamon stars are a delicate Christmas pastry made from almonds, egg whites, sugar, and cinnamon.

Ingredients

500 g Nuts, almonds

5 pieces Egg, egg white, fresh

480 g Powdered sugar

1.5 teaspoons Spices, cinnamon, ground
Steps

Beat the egg whites into stiff peaks. When the peaks are not yet fully firm, gradually add 450 g of sugar and continue beating for another ten minutes until you achieve stiff peaks.

Mix the ground almonds and cinnamon. Set aside four to five tablespoons of the egg white mixture and store it in the refrigerator. Add the ground almonds and cinnamon to the remaining egg white mixture and gently fold everything together. Store the mixture in the refrigerator for about 60 minutes.

Prepare two sheets of baking paper. Sprinkle the first sheet with the remaining powdered sugar and spread the cooled mixture on top. Cover with the second sheet of paper and roll out the mixture in between to about 1 cm thickness. Remove the paper and cut out stars from the rolled-out mixture. Dip the cookie cutter in powdered sugar while cutting.

Transfer the stars to a baking tray lined with baking paper. Brush them with the reserved egg white mixture and let them air dry for at least two hours (preferably overnight), then bake them for 10 minutes at 160 °C. Wait for them to cool slightly, then carefully transfer them to a wire rack. Let them cool completely.

Serve the cooled stars on a plate and enjoy.

Advice
Instead of ground almonds, you can use whole almonds. Pour boiling water over the almonds, drain, remove the skins, dry them, and then finely grind them. Pastry made from almonds that are ground just before adding them to the dough has a better aroma. The dough for cinnamon stars is very soft, so some patience is needed when cutting them out. When transferring them, use a wide knife for assistance. Store cinnamon stars in metal tins to keep them crispy.
