Cinnamon Sugar Doughnuts

Ingredients

425 g Flour, Wheat, bread flour

1 teaspoon Salt, table

1 spoon Powdered sugar

2 spoons Milk, powdered, whole milk

1.25 teaspoons Yeast, dry

2 piece Egg, fresh

175 ml Water

Steps

In a separate bowl, crack the eggs and beat them with a fork. Prepare a larger bowl and sift the flour into it. Salt the flour around the edges and sprinkle with powdered milk, then make a well in the center where you add the yeast and sugar. Add the beaten eggs to the mixture and gradually mix in enough warm water to form a smooth and soft dough. Transfer the dough to a lightly floured work surface and knead it thoroughly.

Knead the dough for about 5 minutes, then return it to the bowl, lightly cover it with oiled plastic wrap, and let it rise in a warm place for about an hour. Then, transfer the dough back to the work surface and knead it thoroughly again.

Prepare a large enough piece of parchment paper and lightly grease it with oil. Roll out the dough on a lightly floured surface to a thickness of 1 cm and use a round cookie cutter with a diameter of 4 cm to cut out circles. Make a hole in the center with your finger.

Roll out the remaining dough again and cut out circles following the same procedure, making holes in the center with your finger. Repeat the process until all the dough is used. Carefully transfer the doughnuts to the greased parchment paper, leaving enough space between them to allow them to rise. Lightly cover them with oiled plastic wrap and let them rise for an additional 30 minutes.

Place a larger pot on the stove and fill it halfway with oil. Heat it to 180 degrees Celsius (a sign that the oil is just right is when a cube of bread dropped into it does not sizzle).

Carefully place about 4 to 5 doughnuts at a time into the hot oil and fry them for 1–2 minutes until they start to brown. Then, flip them with a slotted spoon and continue frying until both sides are golden brown.

Carefully remove the doughnuts from the oil with a slotted spoon and place them on paper towels to absorb excess fat. Fry the remaining doughnuts following the same procedure. In a separate bowl, mix powdered sugar with ground cinnamon. Arrange the doughnuts on a serving platter and sprinkle them with the cinnamon sugar mixture. Serve.
