Clafoutis with Blackberries
Despite its unusual name, clafoutis (orig. clafoutis) is an extremely simple and quickly prepared dessert. You can use any fresh seasonal or preserved fruit, pour it with a liquid batter, and bake it in the oven. Clafoutis is best when its still warm, and for an extra treat, enjoy it with a scoop of ice cream, Greek yogurt, or cold whipped cream.

400 g Blackberries, fresh

85 g Nuts, almonds

25 g Wheat flour, white, multi-purpose

200 ml Milk, whole milk

Steps

If necessary, quickly rinse the blackberries under running water and drain them well. Grease a pie or baking dish with butter, then add the blackberries and spread them evenly across the bottom. Preheat the oven to 180 degrees Celsius.

In a bowl, mix the ground almonds, flour, and salt. In another bowl, whisk the eggs, yolks, sugar, milk, and sweet cream with a hand whisk. Add the dry ingredients to the bowl with the wet ingredients and mix well until you get a smooth, thin batter without lumps. Pour the prepared batter over the blackberries. Bake the clafoutis in the preheated oven for 30 to 35 minutes, or until it rises and turns golden brown on top.

Remove the baked clafoutis from the oven, let it cool for a few minutes, then dust it with powdered sugar and serve it warm.
