Clafoutis with Cherries
This traditional French dessert is usually made with ripe black cherries, which are not pitted before use, as this keeps all the cherry juice in the pastry, and the pits also add a slight almond-like aroma to the dough during baking. The preparation is quick and easy, and the dessert is a kind of combination of pudding and cake. It is usually served while still slightly warm, and dusted with powdered sugar before serving.

400 g cherries, fresh

1 spoon Butter, unsalted

1 spoon Sugar, white

60 g Sugar, white

125 ml Sweet cream

125 ml Milk, whole milk

60 g Flour, Wheat, bread flour

1 teaspoon Vanilla, extract, imitation

Steps

Beat the eggs and sugar until frothy. Add the milk, cream, flour, a pinch of salt, and vanilla extract (you can also use vanilla seeds, aroma, or vanilla sugar). Mix well. Once you have a completely smooth mixture, stop mixing and let the batter rest for 20 minutes.

Preheat the oven to 180 degrees Celsius. Meanwhile, wash the cherries and remove the stems. If desired, you can also remove the pits.

Grease a round pie dish (24 to 26 cm in diameter) with butter and sprinkle with granulated sugar. Be sure to grease and sugar the edges of the dish as well. Place the cherries in the dish and spread them out in a single layer. Place the dish in the preheated oven for 5 minutes.

Once the fruit has softened slightly, remove the dish from the oven. Slowly and carefully pour the prepared batter over the cherries. It's best if there is just enough batter to almost completely cover the cherries in the dish. Place in the oven and bake for 30-35 minutes, or until the top of the dessert is golden brown.

Let the dessert cool slightly before serving. While still warm, dust the top with powdered sugar and serve.
