Clafoutis with Strawberries
Clafoutis (pronounced klafuti) is a popular French dessert with fruit, traditionally prepared in a cast-iron skillet and baked in the oven. If you don’t have a cast-iron skillet, you can also use a smaller round or rectangular baking dish. The process is very simple: a smooth batter is made from flour, eggs, milk/cream, and sugar, which is then poured over the fruit placed in the skillet or baking dish, and everything is then baked in a preheated oven. The most popular and well-known version is clafoutis with black cherries, but this time we present a version with strawberries that will surely delight you as well.

500 g Strawberries

1 spoon Sugar, white

3 pieces Egg, fresh

50 g Sugar, white

125 ml Sweet cream

125 ml Milk, whole milk

1 teaspoon Vanilla, extract, natural

85 g Flour, Wheat, bread flour

Preheat the oven to 180 degrees Celsius. Quickly rinse the strawberries under running water if necessary and remove the green parts. Halve the strawberries, sprinkle them with a spoonful of sugar, and mix.

Grease a cast-iron skillet or baking dish well with butter, then arrange the sugared halved strawberries in a single layer.

Whisk the eggs until frothy with sugar. Add milk, cream, vanilla extract, and a pinch of salt. Mix well.

Sift the flour into the egg mixture. Stir until you get a smooth batter without lumps, then pour it over the strawberries in the skillet (or baking dish). Bake in the preheated oven for about 35 to 40 minutes. The clafoutis is done when it rises nicely, and a skewer or knife inserted into the center comes out clean.

Let the baked clafoutis rest for 10 minutes, then dust it with powdered sugar and serve warm. A dollop of cold whipped cream on the side pairs perfectly.
