Clams in Salad

Ingredients

1 kg Shellfish, abalone

1 dl Alcohol, Wine, White

pieces Juice, lemon

3 spoons Oil, olive

pieces Garlic, fresh

pieces Parsley, fresh

Steps

Pour wine and water into a wide pot. Place it on the stove and when the liquid boils, add the cleaned clams. Cover the pot and cook the clams for 5 to 10 minutes, or until they open. Shake the pot well several times during cooking. Discard any clams that do not open during cooking.

Place a strainer over a bowl and pour the cooked clams into it. Once they have cooled slightly, remove them from their shells (save a few clams in their shells for decoration). Strain the liquid that has collected in the bowl through a fine sieve.

Peel the garlic and rinse the parsley under running water, then shake it dry. Finely chop both ingredients. In a small bowl, make a dressing with lemon juice, olive oil, garlic, parsley, salt, pepper, and a few tablespoons of the strained liquid (freeze the rest and use it for preparing other seafood dishes).

Place the cleaned clams in a bowl and pour the prepared dressing over them. Mix well, garnish with whole clams, and refrigerate for 1 to 2 hours to allow the clams to marinate beautifully.
