Classic Pretzels
Pretzels are indispensable at Oktoberfest, as they pair best with beer. You can recreate a similar atmosphere at your home table with just a cheerful company, beer, and of course, pretzels prepared according to our recipe!

Ingredients

325 g Flour, Wheat, bread flour

75 g Flour, Whole wheat

2 teaspoons Sugar, white

1 teaspoon Salt, table

1 teaspoon Yeast, dry

Steps

Prepare a large bowl and pour both types of flour into it. Salt the flour around the edges and make a well in the center where you add the yeast and sugar. Gradually pour in lukewarm water until you get a soft dough.

Turn the dough onto a lightly floured work surface and knead it for about 5 minutes or until it becomes smooth and elastic. Return the dough to the bowl, lightly cover it with oiled plastic wrap, and let it rise in a warm place for about an hour.

Then turn the dough back onto a lightly floured work surface, knead it well again, and divide it into 16 equal pieces. Shape each piece of dough into a thin roll, about 30 cm long. Twist the roll to form a wide loop, then grab each end of the roll with one hand. Cross the two ends of the roll once at the halfway point, then press the ends onto the roll to create the traditional pretzel shape (see picture).

Transfer the pretzels to a greased baking sheet, lightly cover them with oiled plastic wrap, and let them rise in a warm place for another 30 minutes. Preheat the oven to 200 degrees Celsius. Remove the plastic wrap and place the baking sheet in the oven for 10 minutes.

Meanwhile, place a pot on the stove and pour water into it, adding finely ground salt and sugar. Stir until both ingredients are completely dissolved. Once the pretzels are baked, brush them with the prepared glaze and sprinkle with coarse sea salt.

Transfer the pretzels to a cooling rack to cool completely, then arrange them on a serving platter and serve.
