Cmočki with Pork and Oyster Mushrooms, Yellow Cherry Tomato Sauce, Sautéed Broccoli

Finely chop the onion and oyster mushrooms, then sauté them. Add chopped mint and marjoram, and mix the sautéed ingredients with the ground meat. Season the mixture with salt and pepper, and let it rest for a while to allow the ingredients to bind well.

Make a pulled dough from flour, salt, water, and oil, roll it out thinly, and cut out circles. Place a spoonful of the prepared meat mixture in the center of each circle, then shape them into cmočki (dumplings) and steam them. Once cooked, lightly pan-fry the cmočki.

Separate the broccoli into florets, blanch them in salted water, then quickly sauté them in butter until crispy.

Blanch the yellow cherry tomatoes in boiling water to remove the skins, then peel them and season with salt, sugar, pepper, oil, and parsley. Roast the seasoned tomatoes in the oven at 180°C (356°F) for 20 minutes, then blend them into a smooth sauce. Finally, stir in chopped tarragon.
