Coconut Energy Balls
Quickly prepared balls without cooking or baking are a great snack between meals, and you can also enjoy them before a workout. They contain only healthy ingredients, and with the addition of lemon juice and lemon zest, they are pleasantly refreshing. Cashews and chia seeds are an excellent source of proteins and healthy fats, while dates contain a lot of vitamin B5, which boosts stamina, gives the body energy, makes us more alert, and increases concentration.

Ingredients

150 g Nuts, Indian, roasted without oil, unsalted

170 g Date, fresh or dried

45 g Coconut, flakes

40 g Flaxseed

pieces Lemon zest, fresh

First, add cashews to a food processor and coarsely chop them.

Add pitted dates, chia seeds, 30 g of coconut flour, and mix until the ingredients combine into a uniform mass.

Add lemon zest and juice, and mix everything well again. The resulting mass should easily form into a ball. If it is too soft or sticky, you can add a bit more coconut.

Lightly moisten your hands. Take a spoonful of the mixture and shape it into a ball with your palms, then roll it in coconut. Repeat the process until you run out of mixture.

The prepared balls can be stored in an airtight plastic container in the refrigerator for up to one week.
