Pour the coconut into a shallow bowl. Using a scoop, form small balls from the vanilla ice cream and roll them in the coconut. Place them on a baking sheet lined with parchment paper. Loosely cover the baking sheet with plastic wrap and freeze for 30 minutes to 1 hour to allow the balls to firm up.

Serve the prepared balls on a large plate or platter and serve immediately.
