Ingredients
Lime syrup

Steps

Wash and dry the limes with a kitchen towel. Finely grate the zest of one lime and coarsely shred the zest of another. Cut one lime in half and squeeze the juice from both halves. In a small cup, mix sugar, water, and the finely grated lime zest. Place the cup on moderate heat and stir until all the sugar dissolves. Once the liquid boils, cook for another 2 minutes to slightly thicken. Remove the cup from the heat and let the syrup cool. Mix the lime juice into the cooled syrup and store the cup in the refrigerator until needed.

In a small bowl, mix the powdered gelatin with two tablespoons of cold water. In a cup, combine coconut cream, sweet cream, sugar, and the coarsely shredded lime zest. Place the cup on the stove and stir until the sugar dissolves. Before the liquid boils, remove the cup from the heat and mix in the gelatin.

Rinse molds or cups with cold water and fill them with the prepared mixture. Cover them with transparent foil and refrigerate for 5 hours to allow the gelatin to fully set.

Slice the remaining lime into thin rounds and cut each round into quarters. Turn the cooled coconut jellies onto plates and drizzle each with a bit of the lime syrup. Decorate the plates with lime quarters, sprinkle coconut flakes on the jellies, and serve the prepared dessert.

Advice
