Coconut Pancakes with Yogurt and Fruit

Ingredients

1 spoon Coconut, meat

2 spoons Oil, plant, coconut

2 piece Egg, fresh

1 teaspoon Honey

0.5 teaspoons Salt, table

1 bag Sugar, white

2 spoons Coconut, flakes

60 ml Milk, whole milk

200 g Yogurt, plain, from whole milk

1 cup Blueberry, raw

1 cup Red currant, fresh

1 spoon Oil, plant, coconut
Steps

In a small cup, heat coconut oil (butter) and coconut concentrate. Once the concentrate melts, remove the cup from heat. In a bowl, whisk the eggs with a hand mixer. While continuously mixing, pour in the coconut mixture. Add honey, vanilla sugar, and salt, and mix everything well. Then, fold in the coconut flour. Finally, mix in the milk.

Place a pan on the stove and heat it well over medium heat. Grease the pan with a little coconut oil (using a brush or paper towel). Pour a small ladle of coconut batter (about 50 ml) onto the heated pan. Spread the batter evenly across the pan to avoid holes and ensure the layer is as uniform as possible. Cook the pancake on one side – you can use a wooden spatula to lift the pancake and check if it’s cooked. Then flip the pancake and cook the other side. Place the cooked pancakes on a warmed plate. Repeat the process until you have enough pancakes or use up all the batter.

Once all the pancakes are cooked, serve them on plates. Place a pancake on the plate and spread a heaping spoonful of yogurt over it. Sprinkle with some fresh fruit and cover with another pancake. Spread yogurt on the second pancake, sprinkle with fruit, and cover with another pancake. Repeat the process one more time. Serve the pancakes with yogurt.
