Coconut Roll Without Baking

Ingredients

100 g Butter, unsalted

100 g Powdered sugar

100 g Coconut, flakes

250 g Breadcrumbs, dried

3 spoons Cocoa, powdered, unsweetened

3 spoons Alcohol, Rum

Steps

Finely grind the biscuits in a food processor. Transfer them to a bowl and mix with powdered sugar, cocoa, and rum. Slowly pour in warm milk. Knead until you get a compact dough that doesn't stick to your fingers. Shape it into a ball and refrigerate to cool.

Mix softened butter and powdered sugar until you get a light cream, then stir in coconut flour.

Divide the cooled dough into three parts. Prepare a piece of food wrap and sprinkle a little coconut flour on it. Place one part of the dough on the wrap and cover it with another piece of food wrap. Roll the dough to about 4 millimeters thick and spread 1/3 of the coconut cream on it. Carefully roll the dough into a roll using the wrap. Repeat the process with the remaining dough portions. Wrap each roll separately in aluminum foil and refrigerate for at least 3 hours (preferably overnight) to cool and firm up.

Before serving, slice the coconut rolls into approximately 4-millimeter-thick slices. Serve them on a plate or platter.
