Steps

Rinse the cod fillets under running water and dry them well with paper towels. Lightly season both sides with pepper and salt. Peel the onion and garlic, then finely chop them separately. Rinse the thyme sprigs under running water and shake them dry. Strip the leaves from two sprigs, leaving the rest whole.

Heat olive oil in a deep pan and sauté the chopped onion until translucent. Add the garlic and cook it together with the onion for 1 minute until fragrant, then add the tomatoes to the pan. Lightly season with pepper, salt, and thyme leaves, mix well, and slowly bring the sauce to a boil over medium heat.

Let the sauce simmer gently for 5 minutes, then add the seasoned fillets to the pan and cook them in the sauce for 8 to 10 minutes.
