Preheat the oven to 190 °C. Grease the cake pan well and dust it with cocoa powder. Sift the flour and instant coffee into a deep bowl. Crack the eggs into a bowl and, using an electric mixer, beat them together with the sugar into a thick, frothy cream. When you lift the beaters, the trace should remain visible on the cream for at least 15 seconds. Gradually fold the flour and coffee mixture into the egg cream using a whisk.

Pour the batter into the greased pan and place it in the preheated oven. Bake for 30 to 35 minutes. The sponge should be baked but springy to a light touch. Let the baked sponge cool in the pan first, then remove it from the pan and let it cool on a wire rack.

Drain the ginger root and finely chop it. For the filling, in a bowl, mix the mascarpone and honey smoothly using an electric mixer. While whisking, add the liqueur and chopped ginger. Cut the sponge horizontally once. Place the bottom layer on a serving plate, spread half of the prepared filling on it, and place the top layer on top. Spread the other half of the filling on the top layer. Smooth and even out the filling.

Grate the chocolate. Place a saucepan with the grated chocolate and milk on the stove. Stir slowly over low heat until the chocolate is completely melted. Add the butter to the melted mixture and stir just until the butter is melted. Pour the glaze evenly over the cake. Sprinkle with nuts, cut the cake into slices, and serve.
