Coffee Creme Brulee with Cinnamon and Honey

450 ml Sweet cream

1 piece Vanilla, extract, natural

1 piece Spices, cinnamon, ground

6 pieces Egg, egg yolk, fresh

30 g Sugar, white

40 g Honey

1 teaspoon Coffee, espresso

Steps

Preheat the oven to 150 degrees Celsius. Scrape the seeds from the vanilla pod and add them to the sweet cream. Add the cinnamon stick. Bring the cream to a boil and remove it from the heat. Remove the cinnamon stick.

In a bowl, mix the egg yolks, honey, and sugar. Add the coffee to the warmed cream, then gradually pour the cream into the egg yolks and mix well.

Fill the creme brulee molds with the prepared mixture and place them in a baking dish. Place the baking dish in the preheated oven, then pour hot water into the dish until it reaches 2/3 of the height of the molds. Bake the custard in the water bath for 50 minutes.

Once the creme brulee is baked, remove it from the water bath and let it cool. Before serving, sprinkle the top with brown sugar and caramelize it.
