Ingredients

Steps

Place a medium saucepan with 375 ml of milk, 125 ml of cream, sugar, salt, and coffee beans on the stove. Heat the mixture until it boils, then remove the saucepan from the heat, cover it, and let it sit at room temperature for 1 hour.

In a small bowl, mix two tablespoons of milk with cornstarch until smooth. Return the saucepan to the stove and slowly heat the mixture over medium heat. When it starts to simmer, remove the saucepan from the heat and, while continuously stirring, mix in the cornstarch and milk mixture. Return the saucepan to the stove and let the mixture cook for another minute or until it begins to thicken.

Place cream cheese in a bowl. Set a fine-mesh strainer over the bowl. Pour the hot mixture through the strainer into the bowl. Remove the strainer with the coffee beans and mix the ingredients in the bowl well with a hand whisk. Add the remaining milk and cream and mix again. Finally, stir in the vanilla extract and ground coffee.

Place the bowl with the mixture into a larger bowl filled halfway with ice and cold water. Let the mixture cool for about 20 minutes, stirring it several times during the cooling process.

Pour the cooled mixture into containers, seal them tightly, and place them in the freezer for at least 2 hours. Stir the mixture several times during the freezing process.

Advice
It’s best to pour the mixture into flat metal containers, as they conduct heat the best. Store the ice cream in the freezer in well-sealed containers to prevent it from absorbing other odors. If the ice cream has been in the freezer for more than 12 hours, let it sit in the refrigerator for 30-60 minutes before serving.
