Preheat the oven to 180 degrees Celsius. Sift the flour, cocoa, and baking powder into a bowl. Mix the sifted ingredients well. Lightly grease the baking pan and line it with parchment paper.

Whisk the eggs and sugar until frothy. Add the oil, then mix in half of the dry ingredients, stirring slowly until you get a uniform mixture. Repeat the process with the remaining dry ingredients, and finally, fold in the rum. Pour the batter into the prepared baking pan and bake in the preheated oven for 35 to 40 minutes.

Remove the baked sponge cake from the pan using the parchment paper, place it on a cooling rack, and let it cool. Whip the mascarpone, sugar, and sweet cream into a firm cream, then mix in the coffee.

Once the sponge cake has cooled, cut it horizontally into two layers. Place the bottom layer on a tray and spread half of the cream over it. Place the top layer of the sponge cake on the cream and moisten it with a mixture of coffee and rum. Transfer the remaining cream into a piping bag and pipe it in dollops onto the sponge cake. Refrigerate the dessert for a few hours.

When serving, cut the dessert into cubes, place them on plates, dust with cocoa powder, and serve.
