Coffee Whoopie Pies with Orange Cream Filling
You will surely enjoy biting into these sweet sandwich cookies. This is a popular American dessert, consisting of two round cookies held together by a sweet cream filling. The dessert is originally called whoopie pies, but we have named them happy whoopies.

Ingredients

50 g Wheat flour, white, multi-purpose

1 spoon Coffee, espresso

2 piece Egg, fresh

80 g Sugar, white

120 g Cheese, creamy

1 spoon Powdered sugar

Preheat the oven to 190 degrees Celsius. Line two shallow baking sheets with parchment paper. Mix the mascarpone cheese with orange zest and sugar. Store the filling in the refrigerator until ready to use.

In a bowl, sift the flour and coffee. Mix the sifted ingredients well. In another bowl, use an electric mixer to beat the eggs and sugar until frothy. Add the dry ingredient mixture and gently but thoroughly mix with a spatula or spoon until you get a smooth batter without lumps.

Transfer the batter into a piping bag and pipe small mounds onto the prepared baking sheets (about 12 small cookies, 4 cm in diameter, per sheet). Bake the cookies in the preheated oven for 12 minutes. Once baked, immediately transfer them to a wire rack and let them cool completely.

Fill a piping bag with the cooled cream. Use a star-shaped tip and pipe the cream onto half of the cooled cookies. Cover with the remaining cookies, then gently press each 'sandwich' together with your fingers just enough to spread the cream nicely to the edges. Arrange the prepared whoopie pies on a plate or platter and serve.
