Cold Strawberry Soup

Ingredients

2.5 l Alcohol, Wine, White

80 g Sugar, white

1 piece Lemon zest, fresh

300 g Strawberries

2.5 dl Juice, orange

1 twig Mint

Place a small pot with sugar, white wine, and lemon peel on the stove. Slowly bring the contents to a boil, then cook at a moderate temperature for another 5 minutes. Remove the pot from the heat and let the liquid cool.

Clean the strawberries and rinse them under running water. Drain them well and cut them into small pieces. Remove the lemon peel from the cooled liquid, then pour the liquid into the bowl of a kitchen mixer. Add the chopped strawberries and blend everything until smooth.

Pour the blended strawberries into a bowl and mix with orange juice. Cover the bowl and refrigerate for a few hours to allow the soup to cool completely.

Rinse and dry a sprig of mint. Pluck the leaves from the sprig. Serve the cold soup in soup bowls, garnish with mint leaves, and enjoy.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, submerge the lemon in boiling water for a few minutes, then wipe it thoroughly to remove the wax, which contains toxins. Instead of mint, you can use lemon balm for decoration.
