Colorful Baked Vegetable Medley
If you havent tried baked red cabbage yet, we highly recommend this recipe. With a few other types of vegetables, feta cheese, and walnuts, you can quickly prepare a delicious and healthy standalone dish that also pairs well with any piece of meat.

Ingredients
Dressing

2 spoons Oil, olive

3 spoons Vinegar, balsamic

2 teaspoons Honey

1 teaspoon Spices, cumin, seeds

1 piece Cabbage, red, fresh

0.5 piece Pumpkin, raw

2 piece Bell pepper, green, fresh

6 pods Garlic, fresh

1 handful Walnuts

100 g Spinach, raw
Steps

Preheat the oven to 220 degrees Celsius. Line a large baking dish with parchment paper. Wash and dry the vegetables.

Cut the red cabbage in half. Slice the half or the whole into 1 cm thick pieces. Halve the squash. Remove the seeds and cut it into pieces. Remove the seeds from the bell pepper and slice it into 2 cm thick pieces. Peel the garlic cloves.

Arrange the vegetables in the baking dish. Drizzle them with olive oil, season with salt, and bake for 25 minutes.

Meanwhile, toast the walnuts in a dry pan, then roughly chop them. In a small bowl, mix all the ingredients for the dressing.

On a serving plate, make a bed of spinach and place the baked vegetables on top. Crumble feta cheese over the vegetables and sprinkle with walnuts. Drizzle everything with the dressing and serve the prepared dish.
