Steps

Cut the butter into pieces. Measure out the flour and sugar, and sift them onto the work surface. Add vanilla sugar, ground almonds, butter, and egg yolk, then quickly knead all the ingredients into a dough.

Divide the dough into two parts, shape them into logs, and wrap them tightly in plastic wrap like candy. Store in the refrigerator for at least one hour.

Preheat the oven to 180 degrees Celsius. Unwrap the dough and slice it into rounds or slices no thicker than half a centimeter. Place them with some space apart on a baking sheet lined with parchment paper. Bake the cookies for 12 minutes, then let them cool.

Meanwhile, melt the chocolate over a double boiler, or part of it, and add any food coloring of your choice. Use a brush or spoon to apply the chocolate to the cooled cookies, and finally sprinkle them with colorful sprinkles or decorate them as desired.
