1 spoon Butter, unsalted

1 kg Meat, chicken, breasts

4 spoon Spices, curry powder

500 ml Soup base, chicken, cube

2 piece Onion, raw

4 dl Coconut milk

1 pod Garlic, fresh

2 spoons Juice, lime

2 spoons Thyme, fresh

3 spoons Parsley, fresh

0.25 piece Bell pepper, red, fresh

1 spoon Spices, pepper, white

100 g Pistachio
Steps

Wash the bell pepper, clean it, and chop it. Wash the chicken, remove any skin and bones, and cut it into 2.5 cm cubes. Peel, wash, and chop the onion. Peel and chop the garlic.

Heat oil and butter in a large deep pan. Add the chicken to the hot fat and sprinkle it with curry. Cook the chicken over medium heat for 15 minutes. Stir occasionally to ensure the chicken is evenly browned on all sides.

Pour in the chicken broth, add the onion, half of the coconut milk, garlic, lime juice, thyme, marjoram, parsley, bell pepper, salt, and pepper. Mix everything well and cook over medium heat for 45 minutes.

Peel the banana and slice it into rounds. Remove the pan from the heat, stir in the remaining coconut milk, bananas, and pistachios. Serve with your chosen side dish.
