Cooked Green Beans and Potatoes in Tomato Sauce
A hearty vegetable one-pot dish, essentially a meatless version of the popular summer dish boranja, which uses green beans and tomatoes along with meat. In the summer season, the dish is prepared with fresh tomatoes and green beans, while out of season, frozen beans and canned tomatoes can be used. The one-pot dish is very tasty and nutritious, the only thing youll miss while eating is a piece of bread to wipe the plate clean of the last drop of sauce.

60 ml Oil, olive

1 piece Onion, raw

1 kg Green beans, fresh

pieces Garlic, fresh

pieces Tomato, red

500 g Potatoes, white

1 handful Parsley, fresh

Steps

Wash and clean the green beans. Trim the ends and remove any strings along the sides. If desired, cut them into smaller pieces or slice them lengthwise in half (this will also speed up cooking).

Peel the potatoes and cut them into approximately 4 cm pieces. Wash the tomatoes and remove the stems. Cut them into chunks. Chop the parsley.

Place a pot on the stove and heat it up. Add oil and the chopped onion, lightly salt it, and sauté over medium heat, stirring occasionally, until the onion becomes translucent and softens slightly. Then add the green beans and garlic to the pot. Sauté everything together over moderate heat for 2 minutes, stirring occasionally.

Mix the tomatoes and 2/3 of the chopped parsley into the beans, then add the potatoes to the pot and gently push them among the beans with a ladle. Season with salt and pepper. Wait for it to come to a boil, then cover the pot, reduce the heat, and let the dish simmer gently for 30-40 minutes, or until the green beans and potatoes are completely tender. Stir the dish gently several times during cooking and add water as needed to prevent the sauce from becoming too thick.

Once the vegetables are cooked and the sauce has thickened appropriately, taste the dish and adjust the seasoning with salt and/or ground pepper if needed. Before serving, let it cool to room temperature if desired, and sprinkle the reserved parsley on top. Optionally, add a dollop of sour cream when serving.
