200 g Parsnip, fresh

1 piece Onion, young

3 twigs Mint

Steps

Thoroughly wash the parsnip under water, peel it, and clean it. Place a large pot of salted water on the stove and bring it to a boil. Add the parsnip to the boiling water and cook for 15 minutes until it softens. Meanwhile, clean and wash the green stem of the onion and slice it into thin rings. Cut the tomatoes into thin, short strips. Wash the mint, shake it dry, and pluck the leaves. Save one small sprig.

Fill a large bowl with cold water. Using a slotted spoon, remove the parsnip from the boiling water and cool it in the cold water. Then drain it well and return it to the bowl. Sprinkle the sliced onion stem and tomatoes over it. Finely chop the mint leaves and sprinkle them into the bowl. Drizzle with olive oil, season with salt to taste, and mix well.

Transfer the prepared parsnip to a plate, garnish with the sprig of mint, and serve as a side dish.
