Cookie Ice Cream Sandwich with Chocolate Chips

Ingredients

250 g Wheat flour, white, multi-purpose

0.5 teaspoons Baking powder

200 g chocolate, dark

140 g Butter, unsalted

100 g Sugar, white

120 g Sugar, brown

0.5 teaspoons Salt, table

2 teaspoons Vanilla, extract, natural

Steps

Sift the flour into a bowl and mix it with baking soda. Chop the chocolate into smaller pieces. In a small cup, slowly melt the butter over low heat.

Pour the melted butter into a larger bowl, and add both types of sugar, salt, and vanilla extract. Mix everything well. Then add the whole egg and yolk, and mix on medium speed for about 30 seconds. Let the mixture rest for 3 minutes, then mix again for 30 seconds. Repeat the process twice more. After 10 minutes, the mixture will become thick, smooth, and shiny. Add the flour and baking soda mixture and mix on low speed for about 1 minute until all ingredients are well combined. Finally, fold in the chocolate chips and mix one last time with a spatula or hand whisk. Place the bowl with the dough in the refrigerator for 30 minutes.

Preheat the oven to 190 degrees Celsius. Line two low baking trays with parchment paper (or grease them well with butter and lightly dust with flour). Using a spoon, place dollops of dough on the trays, flattening them slightly with the back of the spoon. Make sure there is at least 5 cm of space between each dollop, as the cookies will spread while baking. Bake the cookies in the preheated oven for 10 to 12 minutes. Halfway through baking, rotate the trays.

Once the cookies are baked, remove them from the oven and let them cool completely. Meanwhile, take the ice cream out of the freezer and let it soften. Fill round molds with the softened ice cream. Arrange the molds on a tray and place it back in the freezer until the ice cream hardens again.

Once the ice cream has hardened, remove the tray from the freezer and carefully remove the molds. Assemble "sandwiches" from the cooled cookies and ice cream slices, arrange them on a serving plate or tray, and serve immediately.

Advice
If you dont want to bother shaping the ice cream slices, you can also scoop the ice cream onto the cookies using a spoon. Vanilla extract can be bought or made at home. You can also use vanilla flavoring.
